Original Bahrain Machboos Spice Mix.  A Prestige friend from Bahrain introduced us the Machboos spices mixture. We successfully blended the mixture as premix and the level of aromatic and authentic level are so satisfied.

 

I remembered that i tried to cook the lamb MachboosChicken Machboss and Seafood Machboos more than 26 times in total. No regrets and finally made the finest and most delicious, authentic taste from Bahrain.

    Chicken Machboos

    Ingredients:

    • 2 Whole Chicken Thighs Medium size
    • 4 tbsp Machboos Premix
    • 4 - Tomatoes (Cut)
    • 3 - Red Onions (Sliced)
    • 4 - Jalapeno Chilis (Cut)
    • 700g - Basmati Rice (Half cooked)
    • 600ml - Chicken Stock
    • 5 tbsp - Ghee
    • Cooking Oil
    • 2 - Cinnamon
    • 5 - Cardamom pods
    • 2 - Bay Leave

    Cooking Method:

    1. -Pan sear each side of the chicken for 5 minutes
    2. -Saute the red onions and add 1tbsp of ghee to sauté for 3 minutes
    3. -Add the jalapenos and 4tbsp of Shaury’s Machboos Premix
    4. -Add 600ml of chicken stock and stir
    5. -Add in the cinnamon sticks, cardamom and bay leave and stir
    6. -Put the chicken thighs and tomatoes into the pan
    7. -Cover the pan and let it simmer for 20 minutes
    8. -Take out the bay leave and chicken thighs
    9. -Add in the half cooked basmati rice stir it
    10. -Cover and let it cook for another 15 minutes
    11. -Add 3 tbsp of ghee and stir
    12. -Chicken Machboos is ready to serve!

     

     

    Lamb Machboos

    LAMB MACHBOOS

     

    Ingredients:

    • 1.7kg Lamb Shoulder (Cut)
    • 4 tbsp Machboos Premmix
    • 4 - Tomatoes (Cut)
    • 3 - Red Onions (Sliced)
    • 4 - Jalapeno Chilis (Cut)
    • 700g - Basmati Rice (Half cooked)
    • 600ml - Chicken Stock
    • 5 tbsp - Ghee
    • Cooking Oil
    • 2 - Cinnamon
    • 5 - Cardamom pods
    • 2 - Bay Leave

    Cooking Method

    1. -Pan sear each side of the lamb for 5 minutes

    3. -Add the jalapenos and 4tbsp of Shaury’s Machboos Premix
    4. -Add 600ml of chicken stock and stir
    5. -Add in the cinnamon sticks, cardamom and bay leave and stir
    6. -Put the lamb shoulders and tomatoes into the pan
    7. -Cover the pan and let it simmer for 20 minutes
    8. -Take out the bay leave and lamb shoulders
    9. -Add in the half cooked basmati rice stir it
    10. -Cover and let it cook for another 15 minutes
    11. -Add 3 tbsp of ghee and stir
    12. -Pan fry the lamb shoulder with ghee before serve.

     

    SEAFOOD MACHBOOS

    Ingredients:

    • 600g Fish Fillet
    • 150g Mixed Seafood
    • 300g Mussels
    • 4 tbsp Shaury’s Machboos Premix
    • 4 - Tomatoes (Cut)
    • 3 - Red Onions (Sliced)
    • 4 - Jalapeno Chilis (Cut)
    • 700g - Basmati Rice (Half cooked)
    • 600ml - Chicken Stock
    • 5 tbsp - Ghee
    • Cooking Oil

    Cooking Method:

    1. -Heat the pan with 2 tbsp of oil, add sliced onion, 2 tbsp of ghee and saute for 2 minutes
    2. -Add the jalapenos and 4tbsp of Shaury’s Machboos Premix
    3. -Add 600ml of chicken stock and mixed seafood, stir gently
    4. -Add in tomatoes and stir gently also.
    5. -Add in the fish fillets and mussels, cover and simmer for 10 minutes.
    6. -Take out the mussels and fish fillets.
    7. -Add in the half cooked basmati rice, stir it
    8. -Cover and let it cook for another 15 minutes
    9. -Add 3 tbsp of ghee and stir
    10. -Add 2 tbsp of ghee and pan fry the fish fillets lightly
    11. -Take out the fish fillets and add the mussels, pan fry the mussels lightly before serve.
    12. -Seafood Machboos is ready to serve!
